Cast iron cookware has been with us for hundreds of years and with good reason; it work extremely well, it is inexpensive and once seasoned, it requires very little maintenance. Millions of cooks, whether amateurs or professional; prefer to use cast iron as their cooking tools of preference. You would be hard pressed to find a modern kitchen without at least one cast iron skillet or Dutch oven in their cupboard.

If you love to cook, you definitely need the right tools to be successful and cookware should be categorized as tools. Just as a carpenter needs a hammer and saw, the cook needs the best cookware to achieve great cuisine. Properly cared for cast iron cookware will last for years, as a matter of interest, some people haunt yard sales and antique shops searching for old unusual pieces to restore and cook on once again.

A cast iron utensil needs to be seasoned before it is fit to use. The metal must be coated with a thin layer of protection to prevent food sticking, to eliminate the metallic taste of the raw cast iron and to stop the formation of rust. Most manufacturers tell you to wash the new skillet or pan by hand using hot water and a good brand of dish washing detergent. NEVER put a cast iron utensil in the dishwasher! After washing, rinse and dry thoroughly with a paper towel. I place mine on the stove and heat just enough to drive off all the moisture.

Now is the time to ignore the manufacturer's instructions. Apply a thin coating of grease such as bacon fat or lard. Vegetable oils work but do leave a sticky surface. Some people will recommend food safe mineral oil which should not get tacky; the choice is up to the user. Heat the oven to 450 or 500 degrees and place the pan in the oven upside down over a cookie sheet or some aluminum foil to catch any drips. Bake the pan for at least 1 to 2 hours and let cool. The reason for a higher temperature than what the manufacture recommends is to create a film of carbon on the surface of the pan.

Remember to turn the kitchen exhaust fan on in case it starts to smoke.

To care for the pans, try to clean them when the pan is still fairly hot, Rinse with very hot water from the faucet and scrub with a stiff natural bristled brush. A nylon or plastic bristle brush may melt. Never rinse a red hot cast iron skillet with cold water, it may crack on you. I know because this happened to my favorite griddle.

Never cook at a higher heat than necessary.

Do not use a brand new stainless or copper scrubber or a SOS pad; it will scrape the seasoning off.

If it becomes necessary to wash your cast iron, be brave and do it. Modern dish detergents are primarily wetting agents which when used with a stiff brush will remove the left on grunge, but not the coating. Be sure not to soak the utensil in soapy water. When you are finished, put a few drops of oil on a paper towel and wipe until dry.

Do not store with the lids on, condensation can form cause rusting. If rust occurs, re-seasoning is the only cure.

The more you use your cast iron utensils, the better they will get. The thin layer of carbon you have created will become just like Teflon or Silverstone and require very little oil for cooking.

Crazy About Cast Iron Cookware

I recently purchased a cast iron stove top griddle. It's flat on one side and has ridges on the flip side. The griddle I purchased was already seasoned-meaning it was greased and baked in the oven until the surface becomes stick resistant. I love this griddle and use it as often as I can.

Cast iron cookware is ideal for a number of reasons: 1) it's the only cookware that spreads heat evenly across the cooking surface giving you excellent control; 2) it's not expensive over time because it will last you a lifetime; 3) you can cook fat-free, never needing to add oil to the pan to cook; 4) you can take cast iron from oven to stove top and vice versa; and 5) clean up of cast iron is as easy as rinse in hot water, scrub and dry immediately.

Few culinary tools get better with age. Cast iron cookware does because each time you use it, the heat seasons the pan even more. My southern grandmother used her cast iron skillet for just about everything she made, and man was her food a joy to eat. She made killer cornbread that was sweet and had whole kernels in it. I was never able to get the recipe before she died, unfortunately. I've tried to duplicate it, but there's something not quite on there in my version.

If you love cooking, do yourself a favor and get-at the very least-a cast iron frying pan and griddle. The frying pan is ideal for baking corn bread, cooking salmon, creating one-pot meals, cooking meats that need to brown then go into the oven to finish cooking, and yes!, even baking deep dish apple pie. The griddle makes evenly toasted sandwiches and flatbreads, huge fluffy pancakes, and grills ham steaks and vegetables to perfection.

You might prefer pre-seasoned cast iron since the work is already done for you. It's more expensive than unseasoned cookware for that reason. If you get an unseasoned piece of cookware, it's not that difficult to season it yourself; it just takes a little time. Here's how I've done it:


set your oven's temperature to 300°.
Coat your cookware in either bacon grease or lard. You don't want to use vegetable oil because it leaves a film on the cookware that isn't non-stick.
Place cookware in the oven and after 20 minutes, wipe out the excess grease with a clean, dry cloth.
Place the pan back in the oven for 2 hours.
It helps to repeat the process one more time. The more your cast iron cookware is allowed to heat up with fatty grease, the more it gets seasoned and works like a dream for foods that don't require oil for cooking.

You can find pre-seasoned and unseasoned cast iron cookware on the web, in cookware stores, etc. The best places to search are flea markets and yard sales. You can get a great bargain. Don't be afraid if you find a pan that's got a little rust. That just means the former owner let it sit in water and ruined the seasoning. You can purchase that cookware for a pennies on the dollar, take it home, heat it for a few minutes on the stove top then put it in hot water and scrub away the rust with a Brillo pad. Once the rust is removed, follow the directions to season cast iron. Season it 2-3 times to get a good, solid coating on the pan and you're ready to begin enjoying the benefits of cast iron cooking.

Grilled Cheese Burger - Burger Cooked Like a Grilled Cheese Sandwich

Everyone has had a cheeseburger cooked on the grill. But, how many people have had a "grilled cheese burger" -- a burger cooked like a grilled cheese sandwich? If you're a comfort food junkie and you haven't had one of these, then you are certainly missing out. The grilled cheese burger is perhaps the ultimate comfort food. Below is the simple, but delicious recipe.

The ingredients listed make one grilled cheese burger. Obviously, you'll need more ingredients if you want to eat more burgers -- which you will.

1/2 Lb. - Ground Beef (85% lean)
2 Slices - bread (I use wheat, you can use whatever you want)
2 Slices - Cheese (Any kind you want, as long as it melts easily)
1 Tbls - Butter
1 Tbls - Vegetable Oil (I use canola, but the choice is yours)
Salt and Pepper to taste

1. Melt butter in a skillet over medium-low heat. Cast iron is definitely the way to go here. But, you can use whatever type you have.

2. When butter is melted add both slices of bread. Top each slice of bread with slice of cheese.

3. While bread is toasting, form ground beef into a hamburger patty roughly the same size and shape as a slice of bread. Add salt and pepper to each side.

4. After a few minutes the bread should be a nice golden brown and the cheese should be starting to melt. Take the bread off the skillet and place into a 275 degree oven to keep warm. I use my toaster oven because it's more convenient.

5. Add the oil to your skillet and turn up the heat to medium-high. Then, add the hamburger. set a timer for 4 minutes. When the timer goes off flip the burger and cook for another 4 minutes.

6. The burger should be done at this point. Take the bread out of the oven and place the burger between each slice. Feel free to add any toppings or condiments you like. I prefer mine plain with ketchup on the side.

Seasoning Your Cast Iron Griddle on a Campfire

If you are planning a summer camping trip this year, one of the handiest things to pack will be a cast iron griddle. You can cook almost anything on a cast iron griddle. One of the great things about camping is the campfire. You rarely see any pictures or promotions of camping without it. It does not matter where you go, or how long you stay, the memories will last a lifetime.

You do not have to be gourmet chef when you cook over a campfire. The simplicity of it, is its beauty. You can grill hamburgers and hotdogs, but you may also want some other choices. That is where your cast iron griddle will come in handy. All you need is a good heavy grate to place over the fire and the griddle. With these two items you will be the hero of the trip. Okay, hero might be an overstatement, but I guarantee you will be remembered forever, especially if you burn something!

The trick to cooking with a cast iron griddle is to make sure it is well seasoned. Now you can do this at home or over the campfire, which can sometimes be better. When you season a griddle it can cause quite a bit of smoke and there is no better place to get rid of the smell than outside. To season your griddle, rub it down with lard. Yes, I said lard. You can use vegetable oil, but lard just works better. One thing to remember is that a wood or charcoal fire is going to be way hotter than the heat on your stove top. So, be careful. You do not want your griddle to catch on fire.

To start with set your grate up to one side of the fire. Place your greased griddle on the grate and then using a tool, such as a shovel place some coals under one side of the grate. Just keep in mind; it is easier to add more coals than to take coals out. Let the griddle heat up slowly and get it good and hot. Once you get it hot, to the point where it just starts to smoke, then you can move it to the other side of the grate with some heavy duty pot holders (or the shovel).

Let the griddle cool down naturally, and before you get in your tent for the night, repeat the process. The process of heating it up and cooling it down will expand the pores in the metal and give you a perfectly seasoned griddle. That's all there is to it. Now, the next morning you will be ready to fix a camp breakfast a lumberjack would be proud of.

Stick to Your Ribs Skillet Corn Chowder

Many cook books have corn chowder recipes. The recipe in Fannie Farmer's book, "The Boston Cooking School Cook book," originally published in 1896, calls for canned corn, onions, potatoes, and salt pork. This hearty soup is served with hard "common crackers" soaked in cold milk to soften them.

New England recipes for corn chowder contain the basics of onions, potaotes, corn and cream. Fannie Farmer's recipe may have evolved from New England clam chowder with corn. Southern recipes for corn chowder call for the trinity -- onions, celery, green and red peppers. Many professional chefs and home cooks have experimented with the corn chowder recipes.

Jasper White, on the Leite's Culinaria website, describes corn chowder as "the king of farmhouse chowders." His recipe is based on a Shaker recipe from Hancock Village in Pittsfield, Massachusetts. White adds chicken stock to his corn chowder, along with cumin and tumeric.

Ina Garten's corn chowder recipe, posted on the Food Network website, also contains chicken stock. She adds white sharp cheddar cheese to her chowder for added richness.

On this cold Minnesota morning corn chowder sounded warm and comforting, but I didn't want to go to the store for any fancy schmancy ingredients. When I checked the food on hand I found everything I needed for stick-to-your-ribs corn chowder. I made my chowder in a cast iron skillet, but you may wish to use a soup pot. From start to finish, this hearty chowder took only 20 minutes to make. This recipe feeds four and may be doubled.

Stick to Your Ribs Skillet Corn Chowder

4 slices thick bacon, cut into thin strips with kitchen shears

4 green onions. cut into thin slices with kitchen shears

2 small red potatoes, washed and diced

1/2 cup frozen vegetable combination of corn, carrots, and asparagus, defrosted (I found these leftover veggies in the refrigerator.)

12 3/4-ounce can creamed style corn (I used salt-free.)

3/4 cup fat-free half and half (Approximate measure. I filled the corn can 3/4 of the way with cream)

1/2 teaspoon dried thyme leaves

Salt and freshly ground pepper to taste

Cook bacon in skillet until crisp and brown. Remove bacon with slotted spoon and drain on paper towels. Carefully wipe skillet with additional paper towels. Pour green onions into skillet and saute over low heat until wilted.

Put diced potatoes in a bowl with a little water. Cover and microwave on high for 1 1/2 minutes. Drain water and add potatoes to skillet. Cut defrosted carrots and asparagus into small pieces. Add these pieces, defrosted corn, canned corn, half and half, thyme and salt and pepper to soup. Cover and simmer over very low heat until heated through and flavors blend. Serve with tiny oyster crackers. Makes 4 generous servings.

Outdoor Cooking While Rafting and Camping

Cooking outdoors is a very easy task with a little preparation and planning. If you are planning a rafting or camping trip, there are a few things to remember before you head out to the wilderness, and a few things that can turn a great riverside camp meal into a tantalizing, mouthwatering treat.

First, check your cooking equipment and make sure it is clean and well organized before heading outdoors. Include common utensils and equipment like spatula, turner, large serving spoons, knives, forks, spoons, plates, bowls, cups, coffee pot, cooking pots, pans, (preferably cast iron skillet and Dutch oven), lids, and plastic bags. Utensils can be stored separately in plastic Ziploc bags or long, thin plastic containers with lids. Stack cups inside bowls and pots and pans to utilize all areas of space and remember, you can stack upside down too! Once the tools of the trade are collected, be sure that your cook stove is clean and all working parts are present, including propane, regulator, briquettes, matches or lighter. A few other essentials to include in the cook tubs are pot holders or gloves, foil, cutting board, clean dish towels and scrubbers, dish soap, garbage bags, bleach and a flashlight.

Secondly, plan a menu for each meal of each day that you will be cooking outside. It is easiest to plan the menu by days and meals. For example, Day 1: breakfast, lunch, dinner, snacks, drinks; Day 2: breakfast, lunch, dinner, snacks, drinks, etc. Once you have your menu planned you can easily make the list of ingredients that go into each meal or snack. Break the list into categories like meats, dairy, fruits, vegetables, dry goods and so on, until you have a complete list of supplies you need to pack. This list can also double as a shopping guide. Perishable items like meats should be frozen ahead of time and packed together in a cooler along with other items that need to be kept cold like milk or cheese. Be sure to pack frozen water bottles, or recycled juice bottles full of frozen water to keep ice chest temperatures cold. It is also a good idea to keep a small thermometer in the cooler so that you know temperatures are appropriate to prevent food spoilage. Crushed ice is added after everything else is packed into the cooler, and it is best to pack drinks in a cooler separate from the perishables cooler.

Now that everything is prepared and organized, a few other pantry items are pertinent to note. Add to the dry goods staples items such as salt, pepper, garlic powder, sugar in a mason jar with screwed down lid, an additional empty pint sized mason jar with lid, vanilla flavoring, other favorite herbs and spices including cinnamon and nutmeg, Pam, or your favorite brand of non stick cooking spray, tea, coffee and hot cocoa. These items can fit into a small storage tub with a lid and labeled as Preferred Pantry! In the cold cooler, be sure to add heavy whipped cream in a mason jar with lid, butter, milk and half and half.

Next comes the cooking. Take the time to organize the camp kitchen. set up a hand washing station with water, pump soap and clean towel. Unpack tools and utensils so they are easy to reach, yet discretely out of the way. Prepare the garbage/recycle station before you start to cook. Why Cook With Cast Iron Cookware?

I'm a recent fan of cooking with cast iron cookware. My interest started with my frustration with Teflon coated pans and their tendency to lose their nonstick coating over time. I really dislike replacing my pans. And of course some people express concerns about the safety of ingesting tiny particles of Teflon, although there's so far no definite evidence of health hazards.

While talking with my mother I learned that she was looking at cast iron cookware as an alternative. When properly seasoned it is fairly nonstick, and it can last for generations.

I guess my husband paid attention to my complaints about my nonstick pans. He got me a cast iron pan the following christmas. I was and still am delighted. I now also have my grandmother's old cast iron pan. It's a true delight.

Cast iron cookware can actually make your cooking a bit healthier. It adds a bit of iron to your food. How much depends on the age of the pan and what you're cooking, but the tests have been done, and they are quite clear. It's really nice knowing that something good for you is being added just through your choice of pan.

Cast iron heats very evenly. It may take a touch longer, but it's really not that much of a wait for it to heat up. You can even use it in the oven, which most other pans are not supposed to do.

It's very affordable. When I price cast iron in comparison to stainless steel pans, the iron ones often come out cheaper.

It's more nonstick than stainless steel or aluminum pans. Food can still stick, but in my experience it really doesn't do so all that badly. And if you want a quick way to remove it, I've read that filling the pan with water and then heating it to boiling makes it easier to get the food off.

One thing you will always have to do with cast iron is make sure that you dry it completely, or you do risk it rusting. The easiest way to do this is to place it on the stove and turn on the burner until the pan is completely dry. Give it a light coating of vegetable oil, and you're in good shape.

This bit of extra care is very much so worth it to me. I have pans that I will probably never need to replace, and can be handed down after I am gone. No health worries due to what the pan is made of. All in all I find it to be a very good deal.

Ever been to a garage sale and been rummaging around when you come across what looks to be an old beat up, rusted cast iron pot and think, "who the heck would ever buy that thing, even if it is only a dollar or two?" Well you might reconsider.

Good cast iron can be frequently be reconditioned from what could be considered junk.

First, check to see if that pot is fundamentally OK -- no cracks or chips or pocks in the surface inside or out. The handles are solid. The top, if it has one, fits. The pot is made of thick (1/8 inch or so) cast iron. If all of these things are present, you may have found a bands-20" title="diamond">diamond in the rough.

Grungy cast iron skillets and pots can be reconditioned fairly easily. First, scrub it with a bristle brush and baking soda or mild soap. If rust spots remain, go over them with a heavy duty scouring pad (not steel wool or similar) until the area is smooth. Then coat the pan with a heavy dose of cooking oil or fat and bake at 300 degrees or hotter for at least an hour maybe two or three. [For those who like camping, an alternative is to put the greased pot in the middle of the campfire and leave it for a few hours.] Let it cool and wipe off any remaining oil residue and charred remnants. For really coated pot or skillets this may need to be repeated. When it looks and feels pretty smooth, coat it again with oil and rub down with a soft towel. You should now have a very usable piece of cookware.

Another feature of cast iron is that it gets better with use. Every time you use your skillet or pot, after cleaning, rub it down with cooking oil, heat it up a bit in the oven and store in a dry place. Over time the surface will take on a shiny patina unique to cast iron.

So why go to all of this trouble. Cast iron has features that are great for preparation that are hard to match with other types of cookware. The heavy, thick metal heats slowly but after reaching temperature retains heat well so that when you add meats for braising or browning the surface temperature stays constant, quickly sealing flavors in and yielding that caramelized look which is so appetizing. The constant temperature throughout the pot is great for dishes such as chili, stew, and heavy soups providing even cooking temperature over a much broader surface than just the bottom.

Cast iron is versatile. It can go from stove top, to oven and back and in many cases, directly to the table for serving. The skillet is useful for frying but can also be used for baking. Dutch ovens are one of the most versatile pieces of cookware you will have. They are good for braising and browning or even sautéing. They are perfect for stews, chill and heavy soup dishes. They can be used in a number of innovative and imaginative ways and are limited only by our experience and knowledge.

So the next time you see that old pot at the garage sale, think again. You may have discovered a piece of cookware that you will use for years to come. And it might even become a family heirloom with some great stories attached regarding its source in your family.

When you season a griddle it can cause quite a bit of smoke and there is no better place to get rid of the smell than outside. To season your griddle, rub it down with lard. Yes, I said lard. You can use vegetable oil, but lard just works better. One thing to remember is that a wood or charcoal fire is going to be way hotter than the heat on your stove top. So, be careful. You do not want your griddle to catch on fire.

To start with set your grate up to one side of the fire. Place your greased griddle on the grate and then using a tool, such as a shovel place some coals under one side of the grate. Just keep in mind; it is easier to add more coals than to take coals out. Let the griddle heat up slowly and get it good and hot. Once you get it hot, to the point where it just starts to smoke, then you can move it to the other side of the grate with some heavy duty pot holders (or the shovel).

Let the griddle cool down naturally, and before you get in your tent for the night, repeat the process. The process of heating it up and cooling it down will expand the pores in the metal and give you a perfectly seasoned griddle. That's all there is to it. Now, the next morning you will be ready to fix a camp breakfast a lumberjack would be proud of.
